Chicken Parmigiana

Italian-style dish of chicken breasts, oven-baked with a low-fat, chunky vegetable sauce, with Parmesan topping. Serve with a warm ciabatta or baguette to spice up the taste.

Cooking time 55 minutes, preparation time 10 minutes.

2 table spoons olive oil
1 small onion, finely chopped
2 garlic cloves, crushed
200g small mushrooms, quartered
1 large eggplant, diced
500g roma tomatoes, roughly chopped
15g fresh basil, roughly torn
4 skinless chicken breast fillets (about 500g in total)
2 tablespoons grated Parmesan cheese


1) Preheat the oven to 190 deg C. Heat the oil in a deep frying pan, add onion and garlic and cook, stirring for 2 minutes over a medium heat. Add mushrooms and cook for 3-4 minutes until lightly coloured, stirring frequently.

2) Stir in the eggplant, cook for 2 minutes, then add the tomatoes and stir over a medium-high heat for 2 minutes. Reduce heat and leave to simmer for 15 minutes until thick. Stir in the basil and season.

3) Arrange the chicken in a single layer in a deep ovenproof baking dish or casserole dish and spoon the sauce over the top. Cover and bake for about 25 minutes or until the chicken is thoroughly cooked.

4) Towards the end of the cooking time, preheat the grill. uncover the chicken and sprinkle the cheese over the top of the dish. Put the dish under the grill for 1-2 minutes until the cheese is melted and bubbling.

Year 2009

Well time travel so fast, i could hardly remember what i was doing in 2008.
Having a lot of things to worry about like my final year project that lasted about three months. The ironic part is that i started my project in 2008 and ended on 2009 whereby i only take three months to complete it. It sounded like i take 2 years,,,, hehe

There is always new year resolution in the beginning of the year....... about mine .....
I am so getting ready for my final semester in Utar (University Tunku Abdul Rahman).... though a little lazy, but i will try my best to do what i can,,,, Yeah!!! God will guide me for i am sure of it.

Oh ya!!!! hopefully my final year project about Actinomycetes will be completed soon. Do you know what is Actinomycetes? I know you all want to know more about it right. Let me tell you, Actinomycetes are partially bacteria and fungus looking microorganism which produces antibiotics to inhibit other pathogens. Quite interesting as you can see that most of our antibiotics comes from one of the Actinomycetes family which are commonly know as Streptomyces found to be inhabiting the soil.

Wow our medicine did came from soil dont they!!! Sometime we are infected by phatogens found in the soil and yet the cure is also found in the soil. So what do you all think?

SoMe oNe To AdMiRe

In the begining of chapter 16...... Paul's second missionary journey.
Verse 9 :- God gave Paul a vision of a man of Macedonia saying, 'Come over into Macedonia and help us.' Its is sometimes interesting to see how God works, the call comes from a man, yet the first convert to Christianity through Paul's ministry was a woman named Lydia!

For Example, think how often in scripture it is the woman who is the instrument for ministry...
-Who prompted Jesus to perform His first miracle? A Woman
-Who ministered to Christ during His public ministry? The women!!
-Who anointed the body of Jesus? The women!!!
-Who stayed with Jesus throughout his trial and crucifixion? The women!!!
-Who were the first witnesses to the resurrected Saviour? The women!!!
-Who makes up the majority of the population of most churches today? well guess what .. the women

"In Christ Jesus, there is neither male nor female" (Gal 3:28)
We should thank God for the women like Lydia in Philippi, and their willingness to show us our place, in prayer, in church, and in good works before the Lord. ( Further reading Thessalonica 17/18)

Cooperating with the Holy Spirit-Jon Walker

Let the Spirit change your way of thinking. Ephesians 4:23

Throughout the Bible we see an important truth illustrated over and over: the Holy Spirit releases his power the moment you take a step of faith.

When Joshua was faced with an impossible barrier, the floodwaters of Jordan River receded only after the leaders stepped into the rushing current in obedience and faith. Obedience unlocks God's power. God waits for you to act firs. Don't wait to feel powerful or confident. Move ahead in your weakness, doing the right thing in spite of your fears and feelings. This is how you cooperate witht the Holy Spirit, and it is how your character develops.

The Bible compares spiritual growth to a seed, a building, and a child growing up. Each metaphor requires active participation: seeds must be planted and cultivated, buildings must be build - they don't just appear - and children must eat and exercise to grow. While the effort has nothing to do with your salvation, it has much to do with your spiritual growth. At least eight times in the New Testament we are told to "make every effort" in our growth toward becoming like Jesus (Luke 13:24 Niv; Romans 14:19 Niv; Ephesians 4:3 Niv; 2 Timothy 2:15 Ncv; Hebrews 4:11Niv; Hebrews 12:14; Peter 3:14 Niv) You don't just sit around and wait for it to happen.

Paul eplains in Ephesians 4:22-24 our three responsibilities in becoming like christ.

First we must choose to let go of old ways of acting.
-"Everything .... connected with that old way of life has to go. It's rotten through and through. Get rid of it!" (Ephesians 4:22 MSG)

Second, we must change the way we think.
-"Let the spirit change your way of thinking" (Ephesians 4:23 CEV). The bible says we are "transformed" by the renewing of our minds (Romans 12:2). It is a beautiful picture of what happens to us spiritually when we allow God to direct our thoughts: we are changed from the inside out, we become more beautiful, and we are set freee to soar to new heights.

Third, we must put on the character of Christ by developing new, godly habits. Your character is essentially the sum of your habits; it is how you habitually act. The bible says, "Put on the new self, created to be like God in true righteousness and holiness" (Ephesians 4:24 NIV).

2 Weeks of holiday not enough for me






As my friends knows that Utar(University Tunku Abdul Rahman) student will be having their Sem break now. Sooooo nice, not for me, i only have approximately 2 weeks of holiday. What a short one for this sem due to my final year project.
Actually when coming back to my own sweet hometown in penang, its such a food haven. Food everywhere, choosing what to eat is a major headache. Anything you mention of will be found, except those exquisite food international made. wakakaka
When i am at home i have been a couch potato, its like nothing to do. My only work is to make sure the house is clean and the plants are all watered. Well thats my daily routine, while after finish my chores i will end up in front of the computer. Guess what, either playing games, watching movie and anime, downloading stuff and major thinggy is to check my mail plus playing facebook. Hehe

Finally Get to relax


Hi there! Its me, ha i feel so relax now. I just finish my exam and well time flies so quickly, just a glimpse of it now i am pursuing my final year already in utar. Accomplishing my dreams to graduate with degree cert and maybe i will continuing on taking my masters. What you all think i should do?
Life is full of challenges and decision making destiny, but i will put all my dreams and everything in God's hand cause he will make everything possible in his Time.
Now i have to prepare my final year project already, its about extracting antibiotic from bacteria and use it in human pathogen. I hope i know what i am doing, because sometimes i just dunno what method to use to extract the bacteria i wanted. Oh well, maybe i could try on any actinomycetes. By the way the top picture, you must be wondering why i loaded this picture up, its because of its medicinal properties. Well somesort like immuno-modulators which regulate our immune system to its optimum state and other medicinal properties. hehe If you wanna
knnow more about this plant, you have to wait for the next issue of misai kuching or you can go to google (find out the good properties this plant have to offer).
